Yorkshire Manchego made by Iona Hill of Ribblesdale Cheese, Iona developed this wonderful 100% Ewes milk Yorkshire Manchego in 2019 and went on to win a silver award at Nantwich in the same year, it has a natural rind and is made to a traditional Manchego recipe Iona even sourced the moulds from Spain to give the cheese the authentic patterned rind, we take the Yorkshire Manchegos from Ribblesdale at 4-6 months and mature them on to 12 months, a whole cheese weighs in at between 900g to 1kg and is also available as a half.
