Birch Smoked Tetilla cheese PDO
The name Tetilla refers to its shape very similar to a female breast. This is a cheese with a lot of history, legend says that it was created by the Celts who settled in Serra da Carba, near the region were our cheese comes from. It is produced by family owned cheesemongers, some of them are the 5th generation! This variety of P.D.O Tetilla, is smoked with local Birch wood which gives the cheese a characteristic smoky flavour with a backtaste of dry fruits and nuts It is a semi-hard cheese made from local Galician Blonde, Friesian and Pardo Alpine cow´s milk breeds, which graze freely and are fed with natural fodder. It has an ivory white colour in the inside and slightly yellow on the outside due to the smoking process. It has a buttery texture. This is a delicious cheese ideal to cook with or eat on its own in a cheese board and It pairs well with fruity white wines or beer.
Origin: Moreda, Lanzós, Villalba (Lugo, Galicia, Spain)
Ingredients: Pasteurized cow’s milk (from the breeds Frisona and Pardo Alpina), rennet, salt, lactic starters, stabiliser (calcium chloride) and preservatives (E-235, E-203 & lysozyme).
Rind edible.
Smoked: Birch wood.
Ageing: 45 days
Serving: Perfect temperature to eat this cheese is between 18 and 20º
