Perhaps one of the most well-known French blue cheeses, reported to be a favourite of Emperor Charlemagne. Roquefort is a sheep milk cheese made from the Lacaune breed of sheep in the south of France. The blue is aged for five months in the Combalou caves. The texture is unxtuous melting and lightly shiny with a velvet aspect and smooth taste. In France, it is called the 'cheese of kings and popes'. This cheese is protected by AOC guidelines.
