This is a matured, aged goat gouda with an approx. 2mm thin natural rind. This cheese is not as hard as some of the well known Dutch goat Goudas, but it is full of flavour and has won many awards.
This is one of Ribblesdales higher maintenance cheeses; to achieve the thin rind involves rubbing and turning the cheese by hand twice a week and is matured for between 4 to 6 months.
Along with their goat curd and Goatisan, Ribblesdales Gouda Gold is in the top three most awards won for Iona.
