Northamptonshire Blue handmade by Hamm Tun Fine Foods
Made with Unpasteurised Jersey Milk and Vegetarian Rennet, this Semi-Soft, Raw Milk Blue Cheese is a very firm favourite here at the Online Dairy.
Its producer Gray Bradshaw of Hamm Tun Fine Foods has painstakingly perfected the recipe for this exceptional cheese over many years, from the process of hand ladling the curds to reaching the peak consistency of the Cheese and gaining the optimum Maturing period.
Northamptonshire Blue, is made with raw jersey milk from a Northamptonshire farm, It's made using the morning milk only. It's completely handmade, the curds are hand ladelled into moulds, it's turned 3 or 4 times whilst the excess whey drains away and acidifies over the next 16 hours, It's then hand salted and left to dry for 5 days at room temperature, the cheese is then pierced to allow air to get to the cavities inside the cheese and allow the Penicilium Roqueforte to flourish, It's then placed in the ageing room at 13c. The cheeses are turned daily for 2 weeks and then weekly after that. The blue usually takes about 3 weeks to really start taking hold. The cheese has a natural rind, as soon as the cheese develops enough flavour the cheese is wrapped and moved to a lower temperature room where it is kept for 2-4 months until the desired taste and texture is achieved.
