Marantona Manchego "Cave Aged“ PDO (Unpasteurised)
La Casota Queseria (Big House Dairy) was founded by Jose Areque-a fifth generation Manchego shepherd based in La Solana (Ciudad Real, Castilla La Mancha). Their vast flock of Manchega sheep graze freely on the Castilian plateau, over 700m above sea level. Sheep's diet is supplemented with locally grown cereals to provide the milk with a distinctive flavour. Marantona Manchego is unique, the only Manchego within the confines of the PDO (Protected Designation of Origin) aged in natural caves.
Marantona Manchego is cured for 12 months in natural caves, giving it an exceptional depth of flavour, which is unparalleled by anything currently available. To confirm this, it won Super Gold at the Cheese Awards of 2018-19. The rind is hard and edible, with the cheese varying from ivory to soft gold. The taste is slightly piquant with an acidity that increases with age.
