Cured Subaida Mahón Cheese PDO has been cured for a minimum of 6 months. It has a buttery texture and colour, with an intense flavour that lingers in the mouth.

Arab origin with British influence and a distinctly Mediterranean spirit, this is Subaida: a Georgian-style estate from the mid-19th century, full of history, and a farm where time seems to have stopped.
Subaida’s history has been linked with cheese-making since 1930. The farm is located on Minorca.

The cows live in Subaida farm in a peaceful atmosphere surrounded by nature. This cheese has the taste of aged wood, tradition, and cellars, the unique and uplifting flavour of Mahón.
Eat it raw on its own or paired with fruit or nuts, it will enhance its flavour. A traditional way of eating Mahon is by sprinkling it with black pepper, tarragon and olive oil. It pairs well with Madeira or Rioja.
